The Specialization Course is designed for students who wish to enhance their skills through a unique educational experience. The program allows participants to refine their personal style, deepen their knowledge of authentic Italian cuisine, understand the “Mediterranean philosophy,” and acquire advanced techniques for creating elegant and contemporary dishes.
For many years, IFSE has set itself the goal of training the future Ambassadors of Italian cuisine around the world.
The educational program is structured to provide a solid foundation in the cornerstones of Italian culinary tradition, with particular attention to the knowledge of raw ingredients and the enhancement of the region’s food and wine excellence.
Course Features
During the course, students will deepen their study of dishes, with a focus on flavor, color balance, and presentation. They will also be introduced to innovative cooking techniques, essential for a modern and mindful approach to ingredient management.
Target Audience:
The course is intended for those who have already attended culinary schools or basic cooking courses, as well as professionals in the tourism and hospitality sector, experienced chefs, and operators in the food and wine industry.

The training program consists of:
Institute: 1 month of lessons at the Academy – full time, 5 days a week.
Internship: up to 2 months of internship (optional) in selected and accredited laboratories, restaurants, or hotels.
At the end of the course, you will receive:
- IFSE Certificate as Ambassador of Italian Cuisine – Specialization course in Italian cuisine, with international recognition.

– ITA0039 “Ambassador of Italian Cuisine” in defense of the fight against counterfeiting and protection of Made in Italy

Accommodation for students
IFSE offers a variety of accommodation options just a few meters from the school, designed to meet the needs of all students. You can choose to stay in a double or triple room shared with other course participants, or request a single room for an additional fee.
Registration fee
The cost of the course is €5,550.00 per person (including accommodation in a shared room), to be paid according to the following terms:
– Deposit upon confirmation of enrollment: 20% of the total amount
– Balance: due by the course start date
The course is held in English.
The course will be activated upon reaching a minimum of 8 participants.
The fee includes:
Theoretical and practical lessons at IFSE headquarters, a uniform kit (jacket, apron, and hat with the IFSE logo), teaching materials, lunch at IFSE (excluding Saturdays, Sundays, and public holidays – dinners not included), and transfers during educational visits.
Do courses take place in-person?
Yes, our courses take place in-person involve mostly hands-on activities in order to give our students the possibility to acquire high level practical competences to be prepared to face the working world in conscious way.
Will I find a job after the courses?
The percentage of employment of our students after the course is extremely high: more than 90% of our students find a job within a few months after the end of the formative training in IFSE.
How do payments work?
There is the possibility to finance the cost of the course. Our offices will be happy to give all the details regarding the payment solutions.
What kind of certification will I receive at the end of the course?
Ours is a certificated Academy, the only one to have received a recognition of Italian Excellence at the General Secretariat of the Italian Republic. Upon completion of the course, participants will receive the IFSE Certificate with international validity, along with the certificate from the Industry Association that sponsors IFSE courses.
Are there any requirements to join the course?
The training program requires prior experience.
Are there any planned Open Days to visit the Institute?
Every day is an open day in IFSE: our choice is to welcome you through individual appointments where, in addition to the visit of the Institute, you’ll be able to have an individual interview to analyze your needs and answer specific doubts and questions.
